Pickleman's and Companion Baking, a family owned bakery in St. Louis, have teamed up to develop an all-natural white & wheat bread exclusively for our locations. Our new clean-labeled bread finishes light and flaky on the outside, warm and chewy on the inside and is hand-crafted to compliment the high-quality ingredients you’ve come to know and love.

Our new all-natural loaves are custom formulated to make the best Pickleman’s sandwich. A proprietary blend of flours is used to give just the right crunch after toasting, the perfect tenderness for eating and the ideal texture to hold up to even our Italian Beef. To top it off, our new bread is all-natural – containing only ingredients that are easy to understand and pronounce!

Companionship

Companion – a 25 year old small artisanal bakery in St. Louis, MO bakes each recipe in small batches and has a team of bakers specifically focused on crafting Pickleman’s new split-top loaves.

“At Companion we start with sourcing top quality wheat from Kansas and South Dakota that we locally toll mill just hours before baking.” Says Josh Allen, Founder of Companion Baking. “We gently mix in our ingredients in small batches to preserve the integrity of the grains and then ferment slowly to build flavor and structure in the loaf.”

Some fun facts about our partnership with Companion:

  • All of Companion’s baked goods are made in a state-of-the-art facility in West St. Louis in full view of customers coming in to watch the baking process.

  • All of Companion’s unbleached white flour is milled in St. Louis and reaches their baking factory within hours of milling.

  • Companion breads have been served to 4 different Presidents of the United States, the Pope and even the (original) Grateful Dead.

  • Companion employs over 125 hard-working folks from STL and produces 30-40,000 lbs. of breads, rolls, buns and pastries daily – they are super proud to be partnering with Pickleman’s.
